Ingredients
- 1 pie crust (follow the recipe here)
- 400-500 gr spinach, fresh or frozen
- 2 large eggs
- 150 gr Greek feta cheese
- 2 medium sweet potatoes
- 1 large onion, caramelized (learn how to caramelize onions)
- 150 ml yoghurt
- a pinch of baking soda powder (sodium bicarbonate)
- salt and pepper to taste
- grated mozzarella cheese for the top (optional)
Method
Step 1
Prepare the caramelized onions.
Step 2
Slice the sweet potatoes thinly and boil them for a couple of minutes until tender.
Step 3
Cook the spinach leafs in a skillet no more than a couple of minutes and remove the excess liquids. If you use frozen spinach, you can quickly defrost it under water in a fine mesh strainer. Squeeze it until dry, otherwise the pie will turn watery.
Step 4
In a big bowl mix well the spinach, crumbled feta cheese, eggs, yoghurt and baking soda. Season to your taste with salt and pepper.
Step 5
Arrange the sweet potatoes so as to cover the whole surface of the pie crust and add the caramelized onions. Pour the spinach mix and finally sprinkle some mozzarella cheese on the very top.
Step 6
Cook for about 25 to 30 minutes in the middle of a preheated oven at 200°C. The pie is ready when it has risen slightly (here comes the addition of the baking soda) and the cheese is melted. Serve with green salad.
NOTES
If you don’t care much about the sweet flavour, you may omit the sweet potatoes and caramelized onions. Don’t mind meat? Add some (precooked) ham or bacon cubes!
